He Jia Huan is a hawker stall that specialises in ban mian and mee hoon kway, two closely related noodle dishes defined by their handmade, irregularly shaped noodle pieces. The ban mian features flat, hand-torn sheets of dough, while the mee hoon kway uses smaller, roughly cut pieces, both served in a robust anchovy and ikan bilis broth that is both savoury and deeply comforting.

Each bowl is assembled to order, the noodles cooked fresh so they retain a satisfying chew.
